    We have been married now for 2 years. We are expecting our first child a little baby girl any day... We also have two furry babies, Vixen and Maverick our Weimaraners. We love to travel and see the world together. 

    Photography is a hobby that I has recently began. It is a great record of our lives together with a very creative outlet for me. We live in Edmond Oklahoma for Nick to continue pursuing his ventures he is involved with. We own an online company www.hcgmarket.com which keeps us really busy.  We love to be it! We are very passionate about helping people live a happier healthier life.

New season.

Although I love my blog here and may still post on it. Because of my own issues my family business and memories are going to be on a private blog from now on. It was getting too big and too public for me here I think because of the Skinny drops. On my new blog I hope to catch up on the last 4 months or so of baby t”s life. Its Been a Month

Sad I know…. But I am having the time of my life with my four month old!!!!

She is SO FUN. Smiling at me ALL day long. Giggles even when Mommy or Daddy is really funny…

She first giggled for my mom when we were in Lubbock a while back. Of course my mom was eating that up, because she thinks she will miss out on all the “firsts” being so far away! But she got this one all to herself! I was happy for her.

I have officially packed all the Newborn and the 0-3 month clothes away, and are getting her room all ready for a Christmas tree…. She has been sleeping in her Crib like a big girl on her tummy for almost 3 weeks now. She is a great sleeper. Goes to bed at 8pm- and usually up at 7am or 7:30. Couldn’t be more pleased!

She is still on ORGANIC formula although she spits up a lot! She definitely has reflux. But hoping we are at the peak of it. It should slowly decrease as we bring solids in the mix!

Speaking of solids…. SHE GOT HER FIRST TOOTH! 4 Months and 2 days old. It is the bottom left tooth. Whew!!! All that drool wasn’t for NOTHING! She loves bitting my finger with that little tooth, and I am loving it too!!! (Maybe NOT so much if I was still nursing) ;o)

Halloween was fun! She WAS….. MISS PIGGY!

We had a family theme… and it didn’t make it on time. Well still not here. ALTHOUGH we might dress up for the HECK of it when  they do arrive b/c hers wont fit next year anyway. WE had a Halloween Party and everything. No costume. We were bummed, but I threw together her a little Miss Piggy. I loved it. I was that once when I was little so I thought she would be darling WITH HAIR! ;o)

My neighbor gives me a hard time about the BIG BOWS, TUTU’s, PIERCED EARS, BLING PACI, JEWELRY… SO I HAD TO GO ONE STEP FURTHER…..  Kinda my style… The unexpected! She loved it really… She is always pulling my hair… She loved having her own! She was All SMILES!

This is getting SAD!

Ok i have GOT to post more… SOOO much is going on an Tenley bug is SOOOO fun… I just have to remember all of  these things…. I take lots of camera phone pics and I just need to post them… I have been having lots of fun sewing her outfits and such. Stella and Dot is going amazing. I am about to go home for three parties there. Life is just busy and crazy and I am loving it!!!! I promise to come up with some proof tomm

Blane’s Bday

First time is a charm… I made Br Blane a OLD fashioned Strawberry SHortcake from SCRATCH.. .not hard though. Some people on facebook wanted the recipe so I thought I would put it here!

OLD FASHIONED STRAWBERRY SHORTCAKE

Cook Time: 15 minutes

Total Time: 15 minutes

Ingredients:

  • Biscuits:
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons sugar
  • 1 stick butter, chilled
  • 2/3 to 3/4 cup half and half, milk, or cream
  • .
  • Filling:
  • 1 quart strawberries
  • 1/3 cup sugar
  • .
  • 1 1/2 cups whipping cream for topping, or non-dairy whipped topping

Preparation:

Rinse the berries under cold water; drain well. Hull and slice the berries; place in a bowl. Sprinkle with the sugar; cover and let stand at room temperature for about 1 hour. Whip the cream (sweeten with 2 or 3 tablespoons of sugar, if desired) until it holds a soft peak. Cover and refrigerate until ready to serve.Preheat the oven to 425 degrees. Set rack at center level.

In a food processor (you can use a pastry cutter or fingertips) combine the flour, baking powder, salt and sugar and pulse to mix. Cut butter into about 8 pieces and add to the mixture. Pulse until the mixture resembles coarse meal, but with few pea-size chunks of butter left in the mixture. Transfer the mixture to a large bowl and make a well in the center. With a fork stir in the cream or milk, just until dough is moist. Be very careful not to overwork. The dough doesn’t have to hold together well at this point. Let the dough stand for a minute. Turn the dough out onto a lightly floured surface. Fold the dough over on itself (knead) 2 or 3 times, until it is holding together and is less sticky.

Gently pat the dough into a 6 by 12-inch rectangle about 3/4-inch thick and cut into 8 (3-inch) biscuits with a floured round cutter. Transfer to a buttered foil-lined cookie sheet. Brush on a little milk or cream and sprinkle tops with some sugar, if desired. Bake for 10 to 15 minutes, until risen and golden brown. Remove to a platter and split each biscuit horizontally with a serrated knife. Butter the hot buscuits then top with about 1/3 cup of berry mixture. Replace the tops and top with a tablespoon or so of berries. Serve with whipped cream for topping.
Serves 8.

I ALSO MADE MANICOTTI FROM SCRATCH

I USED THE RACHEL RAY RECIPE and then made a homade Sausage Sauce

INGREDIENTS:

  • 2 cups ricotta cheese
  • 1 3/4 cups shredded mozzarella cheese
  • 3/4 cup grated romano cheese
  • 1/3 cup chopped flat-leaf parsley
  • 2 tablespoons milk
  • 3 large eggs
  • 3/4 cup all-purpose flour
  • 3 cups store-bought meat sauce (made my own)

DIRECTIONS:

  1. Preheat the oven to 350°. In a medium bowl, combine the ricotta, 1 cup mozzarella, 1/2 cup romano, the parsley and milk.
  2. In a bowl, whisk the eggs with 1 cup water. Whisk in the flour.
  3. Heat a greased 8-inch nonstick skillet over medium heat. Ladle 3 tablespoons batter into the skillet, swirling to cover the surface of the pan. Cook for 1 minute, flip and cook for 1 minute more. Repeat with the remaining batter, greasing the skillet after each crepe. Stack the crepes on a plate.
  4. Spread half of the meat sauce into a 9-by-13-inch baking dish. Spoon the cheese mixture down the center of each crepe. Roll closed; arrange in the baking dish. Top with the remaining meat sauce and cheeses. Bake for 25 minutes.

I cooked pretty much all day… and it was soo worth  it to see the guys LOVING IT so much…. I love to cook for that reason! The sad part was I didn’t get to have any of it because I am Still on Maintenance. But I will be making these SHortcakes again after I am done. Hope you had a great Birthday Blane! NO TIME!

Sorry one again for the lack of Blogging… It really is a favorite thing of mine, because of the lasting memory that we have once I make my Blurb Book. Which by the way is time for my next on almost!!! Well start working on it… It takes me a while bc I am SO particular.

OK THE BREIF UPDATE

Tenley is 3 MONTHS OLD…. So hard to believe . She is soooo fun though smiling at me all the time…

She is 24 in long

She weighs 11lbs 4 oz

And her head circumference is in the 96th percentile (the looks and the brains! ;p)

She is just now liking to be layed down and left of her tummy or her back. She always prefered the BUMBO, the bouncer, or the swing. But the last couple days she has liked just hanging out on the floor while I am doing stuff…

She is having EARLY signs of teething LOTS of drool and trying to stick her whole knuckle in her mouth, and just fussier than normal somedays. Dr said you never know, they can teeth for a month or 2 before it breaks skin… You just dont know.

I am also Starting another BUSINESS… Hard to believe I know… Okay its not, for any of you that really know me.  I have wanted to for a LONG time, but now I felt it was finally right. It is very PART TIME, and will incorporate some MUCH NEEDED girl time for just me! I am really looking forward to it.

I have HUGE income potential, as well as something I will really enjoy. You can making close to 6 figures working from home 4 hrs a day 2 in the AM and 2 in the PM. I feel like that is very practical for me right now. It has been lot of fun already just creating my trunk show and planning out my schedule. Sending out Custom invitations… SKY iS the limit I have all THESE IDEAS!

I have met wonderful women that are my leaders and they have helping me tremendously.  stella&dot is an amazing company they really make all the resources available for you to succeed. I have been VERY impressed. Not only the business side of it, but the jewelry is really amazing…. I LOVE IT. the line is so proud there is really something for everyone at prices that everyone can afford but still have LUXURY. When I say that I mean IT! Can’t lie I have been known as the Forever 21 jewel junkie… The quality really makes ALLL the difference. Stella&Dot get their stuff manufactured in the same factory as Cartier and Mark Jacobs. You just get it for a LOT lower ticket price, but same great quality and looks!

I am really looking forward to Launching my Business this weekend! My friend Brooke is hosting a HUGE trunk show for me at The Country Club Clubhouse by where she lives, and has invited 150+ It should be LOTS of fun. I can’t wait. I am just so excited for everyone in Oklahoma to start getting to wear stella&dot it is very new here!
